Chocolate Chip Cookie Recipe
Ā
Hereā€™s what you need:
2 sticks salted butter, melted1 cup packed brown sugar (or make your own- listen for instructions)1 cup granulated sugar1 egg2 teaspoons vanilla extract3 teaspoons water2 1/2 cups all purpose flour1 teaspoon baking soda1 teaspoon baking powder1 teaspoon kosher salt
2 1/2 teaspoons cornstarch 6 ounces of chocolate- cut up bars or chips (but bars are better)
Ā
Hereā€™s what you do:
Melt the butter over a low heat- do not brown (unless you feel like it- itā€™s your cookie)
While that's going, blend sugars together in a large bowl
Pour the butter over the sugars and blend until lighter in color
Add egg, vanilla- mix another minute or 2
Add flour, baking soda, baking powder, salt, and cornstarch over the mixture- mix in gingerly using a large spoon or spatula
When most of the flour is incorporated, add the chocolate and mix it bae
Portion cookies out, a little bigger than usual, and let them sit in the fridge for 10 minutes
Space the cookies out, so you don't end up with a giant cookieā€¦althoughā€¦
Bake at 325 degrees for 6 mins
Take the pan out and bang it on a flat surface
Add a generous sprinkle of fancy salt (or kosher if thatā€™s what you got)
Back in the oven we go! Turn up to 350 degrees for another 6-8 minutes
Take them out and let them rest
Eat one over the sink before anyone else notices what youā€™ve done

What better way to nurse Saturdayā€™s hangover, than brunch on Sunday?
Ā
I googled it, and it turns out the origins of the term ā€œbrunchā€ were written in an essay by Guy Beringer in 1895- and he thought this meal would brighten your day after a hard night.Ā
Ā
And, no matter what type of hangover youā€™re nursing, either from booze or just living life in all the wtf-ness thatā€™s going on nowadays- brunch is always a good idea.Ā
Ā
So, thanks to Guy this salty sweet delight of a meal is continuing to fuel our easy summer recipes series.Ā
Ā
We're whipping up quick and easy brunch recipes that include how to make Spanish tortillas, and a watermelon feta salad recipe that has freshness written all over it- and several other unexpected summer recipes that you'll want to make and EAT!
Ā
And, let's give mimosas the day off and decide that learning how to make a peach bellini (or any other fruit for that matter) is worth our time and effort (mostly because it basically takes none).
Ā
So many summer brunch ideas are ahead of you! Welcome in!
